Grease a standard loaf pan (preferably with removable base!).
Add all the dry ingredients to a large bowl and mix well.
Gently melt the coconut oil in a saucepan and add the honey. Take of heat and add the water. Stir and pour into dry ingredients. Combine well, tip mixture into the loaf pan and smooth out the top. Let mixture sit for at least 2 hours (or overnight).
Place in the middle of preheated oven (350° F / 175° C) and bake for 25 minutes. Remove the bread from the pan and place it upside down on a baking rack. Bake the bread for another 40 minutes.
Let it cool and enjoy - you won’t be able to get enough of this bread. Once cool, you can store it in a container in the fridge for 4-5 days. You can also freeze it – makes good toast (just remember to slice before freezing!).
