1 – Watermelon & Feta Cheese
This is my all-time favourite snack! I first discovered it decades ago at the Dead Sea in Israel. Cut a watermelon quarter into smallish chunks. Cut a few slices of feta cheese into small pieces and mix together. Particularly good when chilled.
2 – Banana Nutbread spread with Whipped Coconut Cream
Cut 2 slices and sandwich them together with coconut cream so it’s easy to transport and eat. The recipe for the nutbread is in my book “49 Ways to Eat Yourself Well”.
3 – Celery & Peanut Butter Fingers
I am NOT a fan of raw celery… but absolutely love this combo. Cut celery sticks into 2 inch pieces and fill with organic sugar-free chunky peanut butter (eg Whole Earth).
4 – Lettuce Boats
Separate and wash leaves from any lettuce (I like Little Gem). Add a tbsp of tahini at the bottom of a leaf, add a spoonful of sweetcorn, some chopped red/orange pepper and spring onions.
You can wrap any filling you like into your lettuce – go ahead and recreate your favourite sandwich fillings: egg mayo, hummus, chicken, prawns, falafel, beans, ham and pineapple, pesto…
5 – Avocado (for those days when you are feeling overwhelmed)
1 ripe avocado halved, 1 spoon, dig in!
6 – Toasted Seeds
Mix ½ cup sunflower seeds, ½ cup pumpkin seeds and 2 tsp Tamari soy sauce on a baking tray and spread in thin layer. Bake at a low temperature in the oven for approx. 15 mins. Don’t let the seeds get too brown or crunchy.
7 – Stewed Apple with Whipped Coconut Cream
Stew apples (sprinkled with cinnamon) and store in ramekin dishes in the fridge. When cooled, add a dollop of whipped coconut cream on top. Great for your friendly gut bacteria!
8 – Easy Fruit Salad
Open a can of fruit salad sweetened with apple or grape juice, add chopped fruit of your choice and a little fresh orange or apple juice. Stores well for a couple of days in the fridge. Jazz it up with some pecans, walnuts or almonds and a serving of yoghurt or kefir (optional).
9 – Rainbow Medley & Dip
Cut carrots, cucumber, celery, sweet potato and peppers into strips and dunk into hummous, tahini, guacamole or cashew cheese.
10 – Sliced apples with almond butter
Another effective, easy snack when you’re too busy to think. All you need is an apple, a spoon and a small jar of nut butter. Heaven!
